Focused less on protein and more on boosting your energy levels, these tasty little snacks are packed full of carbs to give you that extra burst of energy and are ideal for a pre-workout snack.

Ingredients

  • 100g rolled oats
  • 1 scoop Matrix Pure Oats
  • 1 tbsp coconut oil
  • 7g xanthan gum
  • 25g ground pecans, half chopped, half ground
  • 2 bananas
  • 15g sweetener
  • 25g sultanas
  • 1/2 tsp cinnamon

Method

  1. Pour enough boiling water over the sultanas to just cover them, then set to one side
  2. Mash the bananas and coconut oil together then heat in the microwave for 1 minute
  3. Add both the oats to the banana mixture, along with the cinnamon and chopped pecans
  4. Stir the xanthan gum and sweetener into the sultanas until thick and gloopy
  5. Combine both of the ingredients and stir until thick then, using a tablespoon, scoop up some of the mix and roll into a ball with damp hands
  6. Sprinkle the ground pecans over a plate along with a pinch of cinnamon and sweetener, then roll each ball in the mixture before laying on a lined baking tray
  7. Place the tray in the fridge to set for 2-3 hours
  8. Once set, store in an air-tight container and keep refrigerated. Consume within three days, or keep in the freezer for up to 3 months.
